Bishop's Mill

The Bisschopsmolen, located in the romantic Jekerkwartier, is a must when you visit Maastricht. The mill belonged to Godfrey de Bouillon in the 11th century AD and after his death passed into the hands of the Prince-Bishop of Liège. The Bisschopsmolengang alleyway leads you to the back of the building (wall dating from 1609), where you can view the waterwheel of the mill. It's a very instagrammable place! Here you can enjoy an authentic regional delicacy - sweet spelled cake - served with coffee, and also take part in a guided tour where you will learn the whole traditional process. In the restored watermill, the miller grinds an ancient type of spelled, the Kollenberger Spelt, with which the baker bakes the tastiest and healthiest types of bread and pastries imaginable.
