Chef Dimitri Van Berlo stays true to his creative-surprising cooking style and his principles, which means, among other things, that he works with vegetables, herbs and even flowers from his own garden where possible. From his philosophy of working with local products as much as possible, the logical choice followed to include seafood on the menu from now on.
