Restaurant Rollier is the result of the shared passion for gastronomy of Nicolas and Maurane, who met during their training at Hotelschool Ter Duinen in Koksijde. Chef Nicolas combines classic French cuisine with refined Asian influences and gained valuable experience in renowned restaurants such as De Tuinkamer, Nuance, and Eyckerhof. Maurane welcomes guests as hostess and ensures a warm, professional reception. Additionally, she carefully curated the wine list following a year of specialization in beverage knowledge and sommelier internships at Hertog Jan.
