After gaining experience in various restaurants, Maarten Mertens is standing on his own two feet in the former historic hotel-restaurant Temsica along the Scheldt. He brings a seasonal cuisine. In sea bass ceviche, the fish is briefly marinated with ponzu and enriched with young beans. Anjou pigeon comes with Porto sauce and potato-pumpkin pie.
